Fried egg on potato pea puree

Ingredients for 4 people:

1 kg potatoes
salt
200 g frozen peas
1 bunch rocket
250-300 ml milk
1 tbsp butter
pepper
grated nutmeg
1 tbsp clarified butter
4 eggs
Also:
Rough stems for garnish

Preparation:

1. Peel and wash the potatoes, cut into pieces and cook in salted water for approx. 20 minutes. Add the peas 5 minutes before the end of the cooking time.

2. In the meantime, wash the rocket, shake dry and chop coarsely. Pour off the potato water. Add the milk and butter and mash roughly. Season with salt, pepper and nutmeg to taste.

3. Melt the clarified butter. Break the eggs one at a time and fry over a medium heat. Season with salt and pepper.

4. Fold the rocket into the puree. Serve in portions, each with 1 fried egg.
Serve garnished with rocket stems.
