Colourful fruit salad with rusks

Ingredients for 2 servings:

200 g strawberries
1 mango, 400 g
1 banana
4 rusks
15 g fresh ginger (or ginger powder)
1-2 lemons / 50 ml lemon juice
20 g brown sugar
3-4 tbsp creamy coconut milk, from a can /100 g
(alternatively 100 g sour cream and 15 g icing sugar).

Preparation:

1. Clean and quarter the strawberries. Peel the mangoes and cut into wedges. Cut bananas into slices. Break the rusks into rough pieces.

2. Put all the fruit in a bowl. Peel and finely grate the ginger. Squeeze the lemons. Mix the lemon juice with the sugar and ginger, pour over the fruit and leave to stand for a short time to infuse briefly.

3. Stir the coconut milk until creamy. Mix the fruit salad with the rusk and pour the coconut milk over it. Alternatively, mix sour cream with icing sugar.

Preparation time approx. 15 minutes
