Panna cotta with strawberries

Ingredients for 4 people:

3 sheets white gelatine
700 ml whipped cream
1 vanilla pod
2 tbsp sugar
250 g strawberries
1 packet vanilla sugar
a few squirts of lemon juice
Lemon balm to garnish

Preparation:

1. Soak gelatine in cold water. Pour the cream into a saucepan. Cut open the vanilla pod and scrape out the pulp and add to the cream together with the pods. Add the sugar. Simmer the cream gently for 15-20 minutes. Sieve the cream. Squeeze out the gelatine and dissolve in the cream.

2. Pour the cream into portion moulds that have been rinsed in cold water. Place
in the refrigerator.

3. Rinse and clean the strawberries. Purée half of them with vanilla sugar and lemon juice. Slice the remaining strawberries.

4. Place the moulds briefly in hot water and turn out the panna cotta onto plates.
Serve garnished with strawberry sauce, strawberries and lemon balm.
