Ingredients for 4 people:
5 leaves gelatine
75 g lady fingers
150 g cherries
3 heaped tablespoons sugar
250 g mascarpone (Italian cream cheese)
150 g low-fat quark
4 tbsp cold coffee
½ bottle butter vanilla flavouring
1 tsp lemon juice
Furthermore you will need:
Cocoa for dusting.
Preparation:
1. Soak the gelatine in cold water. Break 3 ladyfingers into slightly smaller pieces. Wash the cherries, remove the stalks and stones. Cut the flesh in half, mix with 1 tablespoon of sugar and bring to the boil briefly.
2. Mix the mascarpone, quark, coffee, vanilla flavouring, 2 tablespoons of sugar and lemon juice.
3. Squeeze out the gelatine and dissolve in the lukewarm cherries. Stir 2 tablespoons of the cream into the cherries. Stir the cherries into the rest of the cream.
4. Pour the cream and ladyfingers alternately into cold-rinsed moulds and place in the refrigerator for about 1 hour.
5. Before serving, turn out and serve with the remaining ladyfingers dusted with cocoa.
