Cherry cobbler

Ingredients for 6 people:

5 eggs (M)
40 g butter (melted, cooled)
180 g sugar
250 g flour
½ tsp baking powder
700 ml milk
750 g cherries
2 stale buns
½ tsp cinnamon
Also:
250 g cherries
2 tablespoons sugar
1-2 tablespoons of cherry brandy to taste

Preparation:

1. Separate the eggs. Beat egg whites until stiff. Mix butter with egg yolks and 60 g sugar well. Mix flour with baking powder and sift. Add flour and 500 ml milk to the butter-yolk mixture and whisk well. Fold in beaten egg white. Pour half into a well-greased ovenproof dish. Bake in a preheated oven at 200 degrees (gas: level 3-4, convection oven: 180 degrees) for 8-10 minutes.

2. Rinse the cherries, remove the stalks and pit them. Mix cherries with 75 g sugar. Slice the rolls and drizzle with the remaining milk. Spread cherries on the lightly baked dough, spread the rest of the dough and the and the bun slices on top. Mix the rest of the sugar with cinnamon and sprinkle on top. Bake for another 30-40 minutes.

3. Rinse, remove stems and pits from cherries. Mix with sugar and leave to infuse briefly and puree. Flavor with cherry brandy, if desired. Serve separately with the casserole.
