Sweet potato oat biscuits

Ingredients for 2 servings:

300 g potatoes
150 g broccoli florets
Sea salt
80 g seeded oat flakes
1 small sweet potato
50 g feta cheese
1 organic egg
2 tbsp sesame seeds
2-3 tbsp breadcrumbs
freshly ground pepper
marjoram
3 tbsp rapeseed oil
100 ml warm milk
1 pinch of nutmeg
a few leaves of parsley

Preparation:

1. Peel the potatoes, wash them and cut them into small pieces. Clean the broccoli, wash and cut into small pieces. First boil the potatoes in salted water for about 10 minutes. Then add the broccoli to the potatoes and cook for a further 7 minutes. Bring 50 g oat flakes to the boil with 90 ml water, remove from the heat and leave to soak. At the same time, peel and roughly grate the sweet potato. Cut the feta cheese into cubes.

2. Then mix the oatmeal with the sweet potato, the feta cheese, the egg, the sesame seeds, the remaining oatmeal and the breadcrumbs, season with salt, pepper and marjoram. Form 6 biscuits from the mixture. Form 6 biscuits from the mixture. Heat 2 tbsp. oil in a pan and fry the biscuits on both sides until golden brown, about 7 minutes.

3. Add warm milk and 1 tbsp oil to the potatoes and broccoli and mash with a masher. Season with salt, pepper and nutmeg. Serve the biscuits with the mash
serve with the parsley.
