Apricot skewers with wine foam lime sauce

Ingredients for 4 people:

For the wine foam lime sauce:

1 untreated lime
250 ml dry white wine
3 tbsp sugar
4 tsp cornflour
1 egg yolk (M)

For the skewers:

500 g apricots
skewers
50 g icing sugar (sifted)

Preparation:

1. Cut lime peel thinly, squeeze out juice. Mix the white wine with the sugar and
lime peel for approx. 3-5 minutes. Mix the starch with the lime juice. Remove the lime peel, stir in the starch and bring to the boil once. Whisk the egg yolks and stir into the no longer boiling sauce. Leave to cool, stirring occasionally.

2. Halve and stone the apricots. Thread the apricot halves onto skewers and place on a baking tray lined with baking paper. Sprinkle with half the icing sugar and grill under the preheated grill for approx. 1-2 minutes. Turn the skewers and sprinkle with the remaining icing sugar. Grill again for approx. 1-2 minutes.

Serve the skewers with the wine foam lime sauce.
