Meadow salad with wild herbs

Ingredients for 4 people:

2 red onions
150 g mini mozzarella balls
4 stalks wild garlic
2 large bunches of chickweed
20 young dandelion leaves
4 stems sorrel
2 tablespoons apple cider vinegar
2 tablespoons balsamic vinegar
salt, pepper
1 tsp. sugar
½ tsp medium hot mustard
6 tablespoons olive oil
70 g olives
30 g shaved parmesan
Also:
Dandelion flowers and daisies for sprinkling.

Preparation:

1. Peel onions, cut in half, chop finely. Drain mozzarella. Wash herbs, shake dry, cut into smaller pieces if necessary.

2. For the marinade, season vinegar with salt, pepper and sugar. Add mustard and whisk in oil.

3. Mix prepared ingredients, olives, parmesan shavings and marinade loosely.
Sprinkle with dandelion and daisy flowers.

Preparation time approx. 15 minutes
