Walnut - sweet potato bread with ginger

Ingredients for approx. 18 slices:

300 g sweet potatoes
60 g soft butter
150 g brown sugar
120 g maple syrup
1 egg (L)
80 ml milk
1 tsp cinnamon
10 g grated ginger
pulp of 1 vanilla pod
250 g flour
2 tsp baking powder
½ salt
100 g walnuts

Preparation:

1. Peel and dice the sweet potatoes. Boil in water for 15-20 minutes until soft. Drain and mash the sweet potatoes. Leave to cool slightly.

2. Mix the butter and sugar well. Add the mashed sweet potato, maple syrup, egg, milk, cinnamon, ginger and vanilla pulp and mix together.

3. Mix the flour, baking powder and salt together. Add the sweet potato mixture and mix well.

4. Roughly chop the walnuts and mix in. Grease a loaf tin and pour in the batter. Bake in a preheated oven at 180 degrees (gas: level 2-3/circulating air: 160 degrees) for 50-60 minutes.

Tip: This sweet and aromatic bread goes well with sweet spreads, but also with goat's cream cheese, for example.
