Cheesecake Tarte with strawberries

Ingredients for approx. 12 pieces:

40 g coconut flakes
150 g butter
120 g lady fingers
50 g amarettini cookies
3 sheets of gelatine
400 g heavy cream cheese
2 tablespoons sugar
2 tablespoons strawberry syrup
200 g whole milk yogurt
4 tbsp. lime juice
250 g strawberries
Coconut chips for garnish

Preparation:

1. Toast coconut flakes in a pan without fat until golden brown, melt butter. Finely crumble ladyfingers and amarettini. Carefully mix the prepared ingredients and pour into a shallow tart pan (24 cm diameter). Press firmly to the
bottom and refrigerate for about ½ hour.

2. Meanwhile, soak gelatin in cold water. Mix cream cheese, sugar, syrup, yogurt and lime juice. Squeeze gelatin and dissolve while lukewarm. Stir 2 tablespoons of the cream into the gelatin. Stir the gelatine into the remaining cream.

3. Spread the cream evenly on the cookie base and chill again for at least 30 minutes.

4. Shortly before serving, wash and clean the strawberries and cut into thin slices. Top the tart with the strawberries and serve garnished with coconut chips.
