Pancakes with chili - minced beans

Ingredients (serves 4):

For the batter:

250 g flour
1 pinch of salt
1/4 L milk
1/4 L water
4 eggs (M)
clarified butter for baking

For the filling:

50 g Danish bacon, or breakfast bacon as an alternative
2 onions
2 garlic cloves
2 green peppers
2 tablespoons oil
500 g ground beef
2 tsp. sweet paprika
1 can (425 g) chili beans
1/2 package (185 g) tomatoes in pieces with onions
salt, ground pepper

Preparation:

1. Mix flour, salt, milk, water and eggs and let swell for 30 minutes.

2. For the filling, finely dice the bacon. Peel and dice onions and garlic. Quarter and clean peppers, removing white seeds and ribs. Rinse and dice peppers.

3. Fry bacon in a pan until crispy. Remove from pan and drain on paper towels.

4. Add oil to pan and heat. Fry ground beef in it until crumbly. Add onions and garlic. Add peppers and cook for 5 minutes. Sprinkle paprika powder on top. Add chili beans and chopped tomatoes and stir everything together. Simmer for 5 minutes. Season to taste with salt and pepper.

5. Bake pancakes with the dough in hot clarified butter and fill them with the
minced meat and beans mixture.

Preparation time approx. 1 hour
