Pork rolls in beer sauce

Ingredients for 4 people:

8 pork cutlets of 100 g each (from pork loin)
salt
ground pepper
2 packages of mozzarella, drained
20 slices of bacon
30 g clarified butter
1 medium onion, peeled, diced
200 ml beer

Preparation:

1. Carefully pat the cutlets flat, salt and pepper them and spread them out on the countertop. Cut the mozzarella into thick strips and cover the cutlets with it. Roll up the cutlets with the cheese, wrap each meat roll with 2 slices of bacon and secure with toothpicks. Cut remaining bacon into coarse cubes.

2. Heat clarified butter in a frying pan and fry the meat rolls, the bacon cubes and the onion in it approx. 5 minutes under turning roast. Deglaze with beer and let the meat rolls stew in the beer brew for about 10 minutes over medium heat, turning them over and over.

3. Serve the meat rolls with the beer sauce and sprinkle with pepper.

Tip: Potato rösti and fine green beans are a good side dish.

Preparation time approx.: 45 minutes.
