Crostini towers with goat cheese and spicy cherry jam

Ingredients for 4 people:

80 g cherry jam
1 pinch of sea salt
1 pinch of ground chili
1 tablespoon goji berries
3 slices of sandwich toast
2 tablespoons oil
1 tablespoon butter
some small endive leaves
200 g fresh goat cheese (8 small rolls of approx. 15 g each)

Preparation:

1. Season cherry jam with sea salt and chili. Stir in goji berries. Set aside for about 15 minutes.

2. Cut out 4 circles each from the sandwich toast slices with a round cutter (approx. 5 cm in diameter) to cut out 4 circles each. Heat the oil and butter in a non-stick frying pan and fry the white bread rolls on both sides until golden brown. To place on paper towel to drain.

3. Rinse endive, pat dry and pluck even smaller. Cut goat cheese rolls cut in half horizontally.

4. Combine the white bread rolls with lettuce, goat cheese and cherry jam to form towers and serve immediately.

Tip: Mix the leftover white bread in an electric shredder to make crumbs and store in a well-sealed tin or jar.
