Mozzarella - Carpaccio with cherry marinade

Ingredients for 4 persons:

150 g sour cherries
4 tablespoons apple cider vinegar
3 tablespoons white balsamic cream
½ tsp medium hot mustard
6 tablespoons olive oil
250 g mozzarella
50 g pine nuts
2 stalks basil
salt to taste
pepper to taste
approx. 2 tsp brown sugar to taste

Preparation:

1. Put mozzarella in the freezer for a short time.

2. Wash cherries, remove stems and pits. Bring apple cider vinegar and cherries to a boil briefly. Season with salt, pepper and sugar. Let cool again, stir in balsamic cream, mustard and oil and season again.

3. Allow the mozzarella to freeze briefly, then cut into thin slices. Roast pine nuts in a dry pan until golden brown. Wash basil, pluck off leaves, if necessary pluck a little smaller.

4. Arrange the prepared ingredients on a plate and sprinkle with the cherry marinade. serve drizzled with the cherry marinade. Serve with fresh baguette.
