Cranberry fruit bar

Ingredients for approx. 26 pieces:

200 g walnuts
200 g oat flakes extra-soft
100 g coarse oat flakes
100 g coconut flakes
2 level teaspoons baking powder
180 g wild cranberries (from the jar)
75 g soft butter
80 g liquid honey
100 g cane sugar
1 egg white (M)
grated zest of 1 organic orange
pulp of 1 vanilla pod

Preparation:

1. Grind walnuts in an electric grinder not too fine. Mix together with oats, coconut flakes and baking powder in a bowl.

2. Mix the wild cranberries, butter, honey, cane sugar, egg whites, grated orange zest and vanilla pulp. Mix well with the dough hooks of the hand mixer.

3. Line a baking tray with baking paper. Spoon the mixture onto the baking with a tablespoon and flatten with your hand. Bake in a preheated oven at 160 degrees (gas: level 2, fan oven: 140 degrees) for about 50-60 minutes. After about 30 minutes, cover with baking paper or aluminium foil.

4. Leave to cool and cut into bars (approx. 3x10 cm) with a sharp knife.

Preparation time approx. 75 minutes + cooling time
