Blueberry - Muesli - Trifle

Ingredients for 4 persons:

300 ml milk
1 vanilla pod
4 egg yolks (M)
25 g sugar
15 g cornflour
150 ml orange juice
400 g blueberries
150 g whipped cream
160 g whole milk crunchy muesli

Preparation:

1. Pour milk into a saucepan. Cut open the vanilla pod and scrape out the pulp.
Add the pod and pith to the milk and simmer gently for 5 minutes. Mix the egg yolks and sugar in a saucepan with a whisk. Sieve the vanilla milk and add to the egg yolks while stirring. Whisk over a gentle heat. Mix the starch with the orange juice and whisk vigorously into the egg yolk mixture. Heat to boiling point, whisking vigorously. Leave to cool.

2. Sort out the blueberries. Whip the cream until not quite stiff and fold into the
egg yolk cream. Layer the blueberries with the orange cream and the crunchy
glasses and serve immediately.

Preparation time approx. 20 minutes + chilling time
