Onion quiches

Ingredients for 4 pieces:

4 square slices (45 g each) frozen puff pastry
500 g onions
2 tbsp butter
Pepper
salt
200 ml milk
100 g whipped cream
4 eggs
grated nutmeg
½ bunch chives
3 stalks basil
80 g finely chopped Spanish salami

Also:

Basil to garnish
Grease for the ramekins
Flour for rolling out
2-3 tbsp breadcrumbs

Preparation:

1. defrost the puff pastry. Peel the onions and cut into thin rings. Sauté the onions in heated butter for approx. 10 minutes until translucent. Season with pepper and a little salt, leave to cool.
2. Grease 4 small quiche moulds (each approx. 15 cm Ø). Roll out the dough slices slightly larger on a little flour. Line the moulds with the dough, press down the edges and cut off any protruding corners.

3. Whisk together the milk, cream and eggs. Season with salt, pepper and nutmeg. Wash the chives and basil. Cut the chives into small rolls, chop the basil. Stir the herbs into the beaten eggs.

4. Place the onion and salami in the ramekins and pour the egg milk over them. Bake in the oven (electric oven: 200°C/gas mark 3) on the lowest shelf for approx. 30 minutes. Serve garnished with fresh basil.
