Orecchiette with green beans and anchovies

Ingredients for 4 people:

400 g green beans
salt
500 g orecchiette (or penne)
200 g cherry tomatoes (possibly coloured)
4 anchovies (from the jar, pickled in salt)
4 tbsp olive oil
2 tsp chopped oregano
Chilli flakes
Pepper from the mill
2 tbsp sultanas
4 slices bacon

Preparation:

1. Rinse, clean and chop the beans. Cook the beans in salted water for approx. 8-10 minutes.

2. Cook the orecchiette in salted water according to the instructions on the packet.

3. Rinse, clean and halve the tomatoes. Rinse the anchovies, dab dry and chop.

4. Heat 2 tbsp olive oil in a pan. Sauté the tomatoes and oregano briefly. Season with a little salt, chilli flakes and pepper. Drain the beans and add them together with the anchovies and sultanas. Heat briefly. Add a little more pasta water if necessary. Season again to taste.

5. Place the bacon in a cold pan and fry over a medium heat until crispy on both sides. Drain briefly on kitchen paper.

6. Drain the orecchiette well and mix with the beans. Mix in the remaining olive oil. Serve garnished with bacon.
