Seafood salad

Ingredients for 4 people:

2 packs (275 g each) frozen frutti di mare (seafood mix)
1 red and 1 green pepper
1 red onion
1 mini cucumber
150 g cherry tomatoes
juice of 1 lemon
4 tbsp olive oil
salt, pepper
a few lettuce leaves

Preparation:

1. Place frutti di mare in a sieve and rinse briefly under running water. Allow to defrost.

2. Quarter, clean and rinse the peppers. Peel the onion. Rinse the cucumber. Dice the pepper, onion and cucumber very finely. Rinse the tomatoes and halve or quarter them. Mix lemon juice with 2 tbsp olive oil, salt and pepper. Mix the pepper, onion, cucumber and tomato with the vinaigrette.

3. Pat the seafood dry between kitchen paper. Heat the remaining olive oil
in a large non-stick frying pan. Briefly fry the seafood in it. Fold into the vegetable mixture. Rinse the lettuce leaves and spin dry. Arrange the salad on the lettuce leaves.

Serve with white bread.

Preparation time approx. 30 minutes + defrosting time
