White sausages with potato salad and sweet mustard

Ingredients for 4 people:

For the salad:

800 g potatoes, mainly waxy potatoes
Salt
125 ml vegetable stock
2 red onions
1 bunch chives
3 tbsp white wine vinegar
Pepper from the mill
1 pinch of sugar
4 tbsp neutral vegetable oil

Also:

8 white sausages
sweet mustard

Preparation:
1. Wash potatoes and boil in salted water for about 25 minutes. Drain the potatoes and leave to cool slightly.

2. Peel the potatoes and cut into slices. Bring the vegetable stock to the boil and pour over the potatoes. Mix carefully and leave to infuse until the potatoes have cooled.

3. Peel the onions and cut into rings. Rinse the chives, shake them dry and cut into small rolls. Whisk the vinegar with salt, pepper and sugar. Slowly mix in the oil.

4. Mix the potatoes with the vinaigrette. Mix in the onions and chives and season again.

5. Put the white sausages into boiling water and leave to soak for 15 minutes. Serve the potato salad with the white sausages and the sweet mustard.

Preparation time approx. 45 minutes + chilling time
