Apricot matjes tartare

Ingredients for 4 persons:

300 g apricots
200 g cucumber
30 g onion
1 red chilli pepper
250 g matie fillets
4 juniper berries
½ bunch lemon balm
4 tbsp sunflower oil
2 tbsp lime juice
2 tbsp white wine vinegar
1 pinch of sugar
Pepper
Salt
8 slices of wholemeal bread e.g. pumpernickel, approx. 500g

Preparation:

1. Wash, halve, pit and finely dice the apricots (set aside 1 or 2 apricots). Rinse and finely dice the cucumber. Peel and finely chop the onion. Remove seeds from chilli, rinse and chop finely. Finely dice the matie. Chop Juniper berries. Rinse lemon balm, shake dry and chop finely (set aside a few leaves for decoration).

2. Mix the oil, lime juice, vinegar and sugar. Mix all the ingredients with the marinade and leave to marinate for about 1 hour. Season with pepper and salt.

3. Cut out circles (approx. 6-7 cm diameter) from the bread with a cutter. Spread the tartare on the bread circles and decorate with apricot slices and lemon balm leaves.

Preparation time approx. 20 minutes (without waiting time)
