Mashed potatoes with sage and garlic

Ingredients for 4 people:

1 kg floury potatoes
salt
8 sage leaves
3 tbsp olive oil
1 clove of garlic
200 g cherry tomatoes
Pepper
approx. 300 ml milk (3.5 %)
1 tbsp sage flowers

Preparation:

1. Peel, wash and dice the potatoes. Cook in boiling salted water for approx. 20 minutes.

2. In the meantime, crush 2 sage leaves and 1 tablespoon olive oil in a mortar. Peel the garlic and press it through a press. Clean the tomatoes, wash, halve and remove the seeds.

3. Heat 2 tablespoons of olive oil. Fry the garlic and the remaining sage leaves briefly. Add the tomatoes, toss and season with salt and pepper. Heat the milk.

4. Drain the potatoes, add the sage oil and heated milk and mash. Fold in the fried tomato mixture and season again. Serve with sprinkled with sage flowers.
