German kumpir with sausages and coleslaw

Ingredients for 4 people:

4 large floury potatoes
4 tablespoons butter
400 g coleslaw
8 Nuremberg sausages
2 tbsp vegetable oil
½ bunch parsley
½ tsp pink pepper berries
Salt
Pepper from the mill

Also:

Aluminium foil

Preparation:

1. Preheat the oven to 200 °C top/bottom heat (fan oven 180 °C).

2. Wash the potatoes, wrap in aluminium foil, place on a baking tray and bake in the oven for approx. 1,5 hours.

3. In the meantime, prepare the filling. Heat the oil in a pan and fry the sausages for 5-6 minutes. Then cut into smaller pieces. Pluck the washed parsley from the stalk and chop coarsely.

4. Remove the potatoes from the oven, cut in half, remove half from the skin, mash with butter and salt and put back into the potatoes. Fill the potatoes with coleslaw and sausages. Season with salt and pepper and sprinkle with pink berries and parsley.

Preparation time approx.: 35 minutes (plus waiting time)
