What is One Night Encounter?

We held a party to enjoy Toyama ingredients and sake in a luxurious manner throughout the year at "SABASU" in Akasaka, Minato-ku, Tokyo. At the first Spring Ingredients event, participants enjoyed fresh ingredients that were caught on the morning of the event, with the mysterious "firefly squid" and the jewel of Toyama Bay, "white shrimp," as the main dishes.

A once-in-a-lifetime encounter, reminiscent of a refined tea ceremony, a tradition passed down in Japan

"One Night, One Eve" offers a series of special moments, savored with ingredients that are only available on that night, and with different guests and in different locations.

In that one and only moment, we felt a connection with the people who were there, and we enjoyed the food with all five senses - not just taste, but touch, hearing, sight and smell - and we are delighted that these all came into harmony, creating a wonderful moment and place.

What is the charm of Toyama?

The Sea of Japan was formed when the Japanese archipelago separated from the Asian continent approximately 25 million years ago.

The deepest point of Toyama Bay is over 1,200 meters deep near the center, making it one of Japan's three deepest bays, alongside Suruga Bay and Sagami Bay.

Toyama Bay is so rich in marine resources that it is also called a "natural fish pond," and is home to approximately 500 species of fish and shellfish out of the approximately 800 species that are said to be distributed in the Sea of Japan.

And then there's Toyama Prefecture, with its majestic Tateyama mountain range.

From the top of Mt. Tateyama to the bottom of Toyama Bay, there is an elevation difference of approximately 4,000m, and Toyama is blessed with an abundance of seafood and mountain produce, so the chef personally selects and purchases ingredients unique to the region to deliver fresh, seasonal flavors.

Cooking is about "measuring reason."

There is a reason behind every combination of delicate techniques and carefully selected materials.

The focus in 2024 will be on Namekawa City, Toyama Prefecture, with Iguro Kazuto, head chef of Kosugi Sushi Nagomi, a famous restaurant in Namekawa that was also featured in the Michelin Guide Hokuriku 2021 Special Edition, presenting "One Night, One Encounter" each season.

For pairings , Bar de Mitomi Manager Tsuda Mizuki has selected seasonal sake from Toyama to perfectly match the dishes.
