Grilled eggplant with feta cheese and grapes
Ingredients for 4 people: 1 large eggplant200 g feta cheese200 g grapes4 cloves of garlic4 tablespoons olive oil2 tbsp chopped pistachios2 tsp. chopped rosemaryA little saltSome ground pepperRosemary to garnish Preparation: 1. Rinse and clean eggplant. Cut eggplant lengthwise into thin slices (approx. 3mm). Salt slices and place side by side on a tray. Let rest for 10-15 minutes. 2. Peel garlic. Squeeze into olive oil.
