Quark tart with strawberry jam

Ingredients for 12 pieces:

For the shortcrust pastry:

225 g flour
50 g sugar
1 egg (M)
2 tablespoons cold water
100 g butter
For the filling:
30 g goji berries
1-2 tbsp apple juice
4 eggs (M)
120 g sugar
500 g low-fat quark
1 packet vanilla sugar
150 ml whipped cream
Also:
1 tbsp. flaked almonds
1 tablespoon peach jam
150 g strawberry jam

Preparation:

1. Mix flour with sugar and press a hollow into it. Whisk egg with water and pour in. Spread butter in small pieces on top. Chop everything with a knife so that dry crumbs are formed. Then quickly knead everything by hand Knead by hand until smooth.

2. Roll out dough on floured surface slightly larger than the tart or pie pan (approx. 26 cm diameter). Line the greased pan with the dough and cut off the edge cleanly. Place the pan in the refrigerator for about 1 hour.

3. Soak the goji berries in the apple juice (preferably warmed).

4. Separate 2 eggs. Beat egg whites with half of the sugar until stiff. Mix the low-fat quark with sugar, the remaining eggs, the egg yolks and the vanilla sugar. Whip the whipping cream until stiff. Fold the beaten egg whites and whipped cream into the quark mixture. Finally, mix in the goji berries.

5. Spread the quark mixture on the shortcrust pastry and smooth it down. Bake in the preheated oven at 180 degrees (gas: level 2-3, convection oven: 160 degrees) for approx. 40 minutes. Allow to cool. Roast the almonds in a frying pan until they are fat-free. Heat the peach jam, brush the edge with it and cover with the almonds. Spread the strawberry jam in the center of the tart.

Tips: Stir some grated lemon or lime zest into the curd mixture. Knead dough scraps together, roll out and cut out any shapes, e.g. hearts or stars. Cut out stars. Bake for about 10 minutes at the same temperature. Garnish the tart
garnish the tart with them.
