Raspberry parfait on a stick

Ingredients for 6 people:

400 g raspberries
50 g sugar
5 tablespoons water
2 eggs (S)
2 tablespoons raspberry brandy
250 ml whipped cream
wooden chopsticks

Preparation:

1. Sort out raspberries, set aside some for garnish. Puree the remaining raspberries.

2. Boil sugar with water in a saucepan for 3-4 minutes until syrupy. Beat eggs in a bowl and place on a hot water bath. Stir in the sugar syrup in a thin stream and whisk until creamy. Stir in raspberry brandy. Place the bowl in a cold water bath and stir the cream until cold.

3. Whip the cream until stiff and fold it in with the raspberry puree. Divide the mixture into 6 small serving cups (about 125-150 ml capacity). Insert a wooden stick in the center. Freeze for 3-4 hours.

4. Dip the ramekins briefly in hot water and serve the parfait garnished with a few raspberries. Serve garnished with a few raspberries.
