Sour cream cakes with chives

Ingredients for approx. 12 pieces:

For the yeast dough:

125 ml milk
150 g butter
500 g flour
1 sachet dry yeast
1 pinch of sugar
½ tsp salt
2 eggs (M)
For the topping:
250 g stiff sour cream
2 egg yolks (M)
salt, pepper
2 onions
1 bunch of chives

Preparation:

1. Heat milk, melt butter in it. Mix flour with yeast and sugar in a bowl. Add the salt, eggs and milk-butter mixture and mix everything together knead with the dough hook of the hand mixer until smooth. Cover the bowl with a tea towel and leave the dough to rise for about 30 minutes, until it has visibly increased in size.

2. Knead the dough briefly on a lightly floured work surface. Form into a roll and divide into approx. 12 pieces. Shape each piece of dough into a ball and flatten with the ball of your hand. Place on baking trays lined with baking paper. Cover with tea towels and leave to rise for 20 minutes.

3. Whisk the cream with the egg yolk, salt and pepper. Peel the onions and cut into fine rings. Rinse the chives, shake dry and cut into thin rolls. Stir the chives into the sour cream.

4. Press the dough cakes slightly flat in the middle with the heel of your hand. Add the onions spread the onions and then the sour cream on top. Bake in the preheated oven at 200-225 degrees (gas: level 4-5, fan oven: 180-200 degrees) for about 20 minutes.
