Finkenwerder plaice

Ingredients for 2 persons:

500 g waxy potatoes
salt
1 small onion
75 g smoked streaky bacon
½ lemon
2 ready-to-cook plaice (approx. 300 g each)
pepper
flour for turning (50-60 g)
50 g butter
Also:
Lemon zest and parsley for garnish

Preparation:

1. Peel potatoes, wash and cook covered in boiling salted water for about 20 minutes.

2. In the meantime, peel the onion. Finely dice onion and bacon. Divide bacon between two large coated pans and fry without fat until crispy. Add onion cubes and fry until brown.

3. Squeeze lemon. Thoroughly wash plaice, pat dry, sprinkle with lemon juice and season with salt and pepper.

4. Remove bacon and onions and set aside. Place flour on a plate. Turn the plaice in it and tap off excess flour.

5. Spread butter on the 2 pans and heat. Cook the plaice first on the white side for about 4 minutes, then carefully turn and fry on the other side for 4 minutes. Just before the end of the cooking time, add the bacon and onions to the plaice and heat.

6. Arrange the plaice, bacon, onions and potatoes. Garnish with lemon zest and
garnish with parsley.

Preparation time approx.: 40 minutes
