Scallops with vanilla

Ingredients for 8 people:

8 scallops
1 vanilla pod
1 tablespoon oil
1 tablespoon butter
some salt and pepper
2 tbsp. Hot Mango Chutney
1 tbsp. Sweet & Sour Sauce
2 tsp. light balsamic vinegar
2 limes
some mint leaves

Preparation:

1. Pat scallops dry. First quarter the vanilla bean lengthwise. Then cut into strips about 8 cm long. Put one vanilla strip through each scallop.

2. Heat oil and butter in a non-stick frying pan. Fry scallops from both sides for a total of 3-4 minutes. Remove the pan from the heat and re-cook the scallops in the pan for 2-3 minutes. Season with a little salt and pepper to taste. Remove scallops from pan.

3. Add chutney, Sweet&Sour Sauce and vinegar to pan and heat briefly while stirring.

4. Cut limes into wedges. Serve the scallops with the sauce, lime wedges and garnish with mint leaves.
