Endive salad with bacon eggs

Ingredients for 4 people:

8 eggs (size M)
1/2 head endive lettuce
1 red onion
1 red-skinned apple
2 tablespoons apple cider vinegar
2 tsp medium hot mustard
salt, pepper
6 tbsp. oil
8 slices of bacon
some chives for sprinkling

Preparation:

1. Put eggs in boiling water and hard boil for about 10 minutes. Then drain
and rinse with cold water.

2. Clean endive, pluck into bite-sized pieces and wash thoroughly. Spin the lettuce dry. Peel onion and cut into fine rings. Rinse apple, cut into quarters, remove core and cut into thin slices.

3. Mix vinegar with mustard, salt and pepper in a large bowl. Gradually whisk in 4 tablespoons oil. Add endive, onion and apple and mix everything.

4. Peel eggs and wrap with bacon. Heat remaining oil in a non-stick frying pan. Add the eggs and fry the bacon until crispy all around.

5. Arrange salad on plates with bacon and eggs. Sprinkle with chives
serve.
