Grilled pineapple with lime - tonka syrup

Ingredients for 4 people:

2 organic limes
4 tablespoons agave syrup
1/2 tsp pink pepper berries
2 tbsp. peach or apricot marmalade
1 tonka bean
approx. 400 g pineapple pulp
some oil
You will also need
Mint for garnish

Preparation:

1. Wash 1 lime, pat dry and peel with a zester in fine strips. Squeeze both limes. Mix lime juice and agave syrup in a small saucepan. Chop pink pepper berries and add. Simmer gently for 5 minutes. Stir in jam and boil for a few seconds until a syrupy liquid is formed. Finely grate tonka bean and stir in along with lime zest.

2. Cut the pineapple into thin slices. Heat a grill pan, brush with a few oil and grill the pineapple slices on both sides.

3. Arrange the pineapple slices on plate and drizzle with the syrup. Garnish with mint.
