Ingredients for 12 pieces:
12 pieces of pumpkin (approx. 4x2x2 cm)
6 slices of bacon (preferably pancetta)
salt, pepper
olive oil for frying
12 wooden skewers
Parsley to garnish
Preparation:
1. Cook squash pieces in boiling salted water until al dente, about 4 minutes. Drain, rinse and pat dry.
2. Cut bacon slices in half and wrap one piece of bacon around each piece of pumpkin. Season with pepper and salt.
3. Heat a little oil in a frying pan. Gently fry the wrapped pumpkin pieces in it for about 6 minutes on all sides.
4. Arrange the bacon-wrapped pumpkin with skewers on a platter, garnish with parsley and pepper and serve.
