Beef goulash with pumpkin and ribbon noodles

Ingredients for approx. 4 persons:

1 kg beef goulash
3 tablespoons oil
200 g onions
salt, pepper, sugar
1 tablespoon tomato paste
2 tablespoons flour
300 ml red wine
500 ml beef broth
A few sprigs of thyme
3 bay leaves
500 g pumpkin flesh (peeled and seeded)
300 g ribbon noodles

Preparation:

1. Wash the cubed pieces of meat and pat dry. Heat oil in a saucepan and sear meat on all sides.

2. Peel and dice the onions and fry them with the meat until they are translucent. Season with salt and pepper. Add tomato paste and stir in.

3. Dust meat with flour. Deglaze with red wine and let reduce slightly. Then pour in beef broth. Add thyme leaves and bay leaves. Cover the goulash and simmer gently for about 1.5 hours. Stir from time to time.

4. Dice the pumpkin and add to the goulash. Simmer again for about 30 minutes. Season to taste with salt, pepper and sugar before serving. Prepare tagliatelle according to package directions in boiling salted water and serve with goulash.
