Mediterranean mashed potatoes with olives, sun-dried tomatoes and roasted pine nuts
Ingredients for 4 people: 1 kg floury potatoesSalt50 g dried tomatoes in oil50 g black olives (pitted)60 g pine nuts250-300 ml milkPepper4 tsp olive oil Preparation: 1. Peel, wash and dice the potatoes. Cook in boiling salted water for approx. 20 minutes. 2. In the meantime, cut the tomatoes into strips and chop the olives. Roast the pine nuts in a pan without oil until golden brown. 3. Bring the milk and tomatoes to the boil, drain and mash the potatoes.
