Mediterranean mashed potatoes with olives, sun-dried tomatoes and roasted pine nuts

Ingredients for 4 people:

1 kg floury potatoes
Salt
50 g dried tomatoes in oil
50 g black olives (pitted)
60 g pine nuts
250-300 ml milk
Pepper
4 tsp olive oil

Preparation:

1. Peel, wash and dice the potatoes. Cook in boiling salted water for approx. 20 minutes.

2. In the meantime, cut the tomatoes into strips and chop the olives. Roast the pine nuts in a pan without oil until golden brown.

3. Bring the milk and tomatoes to the boil, drain and mash the potatoes. Add the hot tomato milk, olives and pine nuts and stir in carefully.

4. Season again with salt and pepper. Serve in portions drizzled with olive oil.
