Strawberry Cucumber Gazpacho with Vanilla Ice Cream

Ingredients for 4 people:

300 g strawberries
1/2 small cucumber (200 g)
100 ml freshly squeezed orange juice
50 g icing sugar
grated zest and juice of 1 organic lime
4 scoops vanilla ice cream
4 tablespoons crumbled amarettini
4 strawberries to garnish

Preparation:

1. Rinse and clean strawberries, set aside some strawberries. Roughly chop the remaining strawberries. Rinse the cucumber, peel, clean and remove the seeds.
Cut about 4 teaspoons of the cucumber into small cubes and put aside. Put the strawberries, cucumber, orange juice, icing sugar, lime zest and juice in a blender and puree. Chill well.

2. Cut the remaining strawberries into small pieces. Pour the strawberry gazpacho into deep plates. Add the strawberries and cucumber cubes. Add a scoop of vanilla ice cream and sprinkle with Amarettini. Serve garnished with strawberries.
