Manicotti with grilled peppers and olives

Ingredients for 4 people:

500 g peppers (red, green, yellow)
4 tbsp olive oil
1-2 cloves of garlic
grated zest of 1 organic lemon
4 tsp thyme leaves
Salt
Pepper from the mill
500 g manicotti (or penne rigatoni)
80 g black olives (pitted)
50 g freshly grated parmesan

Preparation:

1. Quarter, clean, seed and rinse the peppers. Cut the peppers in half again lengthwise. Brush a grill pan with olive oil and grill the peppers on both sides.

2. Peel the garlic and dice finely. Heat the remaining olive oil in a small pan. Sauté the garlic, lemon zest and thyme leaves. Mix with the grilled pepper pieces and season with salt and pepper.

3. Cook the manicotti in plenty of salted water according to the instructions on the packet until al dente. Mix with the peppers and olives and serve. Sprinkle with freshly grated Parmesan cheese.
